Vegan Pancakes – These fluffy, golden pancakes are made with plant-based milk and flour, making them a delicious and healthy breakfast option. Pancakes are a breakfast staple, and this vegan version is just as good as the traditional recipe, if not better. It’s a great option for those who follow a plant-based diet and it’s also a great way to start your day with a good balance of nutrients and energy.

Ingredients:

1 cup plain flour

2 tsp baking powder

2 tbsp sugar

1/4 tsp salt

1 cup of soy milk

2 tbsp vegetable oil

1 tsp vanilla extract

Instructions:

  1. In a large mixing bowl, combine the flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk together the soy milk, vegetable oil, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients, and mix until just combined.
  4. Heat a non-stick pan over medium heat.
  5. Using a ladle, pour 1/4 cup of batter into the pan for each pancake.
  6. Cook until bubbles appear on the surface of the pancake, then flip and cook for an additional 1-2 minutes on the other side.
  7. Repeat with the remaining batter.
  8. Serve immediately, with your choice of toppings such as maple syrup, fresh fruit, or peanut butter.
